Ingredients

  • 2 cups fresh ripe mangoes, 1/4-inch-diced
  • 1 medium tomato, peeled, seeded and diced
  • 2 cups orange juice
  • 1 small jalapeno pepper, seeded and minced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, extra-virgin
  • 1 medium cucumber. peel, seedless and cut into 1/4-inch dice
  • 1 small red bell pepper, seeded and cut into ¼ inch dice
  • 1 small onion, cut into 1/4-inch dice
  • 3 tablespoons lime juice, freshly squeezed
  • 2 tablespoons basil or cilantro, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  • Process mangoes, tomato, orange juice, jalapeno, garlic, and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until its ready to serve.
