Sun Over Gudhjem
Sun over Gudhjem', is a Danish dish, an open sandwich with rugbrød, smoked herring, chives and raw egg yolk (the "sun") on top. The island of Bornholm, where Gudhjem is situated, is known for its smoking houses.

Ingredients
- 1 slice rye bread, buttered
- 1 smoked or wine marinated herring filet
- 1 whole radish, cut into brunoise
- 1 teaspoon chopped chives
- 1 onion ring, ¼ inch thick
- 1 egg yolk
Instructions
- Place the herring filet over the buttered rye bread. Sprinkle the chives and radish brunoise over. Top with the onion ring and add the yolk in the center. Break the yolk over the garnish and eat immediately.
