  • 0.5 pound scallops, finely chopped
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon olive oil
  • 2 tablespoons coconut, shredded

  • Make the tartare: Finely dice the scallops and place into a bowl. Add the lime juice, shredded coconut, pineapple, coconut milk, chopped shallot, red chili (seeded and finely chopped), and salt and pepper. Mix well and reserve 5 minutes in the refrigerator.
  • Serve: Serve the fish in verrines decorated with extra coconut and pineapple.
