Tahitian Scallop Tartare
Is there anything better than a seafood tartare on a hot summer day? The pineapple adds an exotic touch to this delicious Tahitian scallop dish.

Ingredients
- 0.5 pound scallops, finely chopped
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon olive oil
- 2 tablespoons coconut, shredded
- 4 tablespoons pineapple, finely diced
- 3 tablespoons coconut milk
- 1 green onion, finely chopped
- 1 tablespoon coriander leaves, finely chopped
- 0.5 teaspoon red chili, seeded and finely chopped
- Salt and freshly ground peppercorn, to taste
Instructions
- Make the tartare: Finely dice the scallops and place into a bowl. Add the lime juice, shredded coconut, pineapple, coconut milk, chopped shallot, red chili (seeded and finely chopped), and salt and pepper. Mix well and reserve 5 minutes in the refrigerator.
- Serve: Serve the fish in verrines decorated with extra coconut and pineapple.
