This dip has a fresh, delightful taste and is easy to make; you may use sweet roasted peppers that come in jars or cans. A big hit at parties served with chips, vegetables or tortillas.

Ingredients

  • 2 large red bell peppers roasted, peeled and seeded
  • 1 whole head roasted garlic, pulp squeezed and skin removed.
  • 8 ounces soft plain goat cheese
  • 3 tablespoons virgin olive oil
  • 5 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh rosemary
  • Salt and pepper, to taste

Instructions

  • To make the roasted red pepper dip, place the red peppers, garlic, and cheese in a food processor. Pulse until smooth. Add olive oil, chopped basil, and rosemary, salt and pepper and pulse for a few seconds. Place in a serving bowl. Stir to make sure that the dip is homogenized. Cover and refrigerate for 2 hours.
  • Serve with your favorite cut vegetables.
