Ingredients
- 2 cups fresh ripe mangoes, 1/4-inch-diced
- 1 medium tomato, peeled, seeded and diced
- 2 cups orange juice
- 1 small jalapeno pepper, seeded and minced
- 2 cloves garlic, minced
- 2 tablespoons olive oil, extra-virgin
- 1 medium cucumber. peel, seedless and cut into 1/4-inch dice
- 1 small red bell pepper, seeded and cut into ¼ inch dice
- 1 small onion, cut into 1/4-inch dice
- 3 tablespoons lime juice, freshly squeezed
- 2 tablespoons basil or cilantro, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- In a blender or food processor, combine mangoes, tomato, orange juice, jalapeño, garlic, and olive oil.
- Process until smooth.Transfer the puree to a medium bowl, then add the cucumber, bell pepper, onion, lime juice, and herbs.
