Crispy Asparagus Goat Cheese Tart
This Crispy Asparagus Goat Cheese Tart is quick and easy to make. I love the combination of this asparagus, prosciutto, and arugula. It makes me feel as though I'm having brunch in Italy.

Ingredients
- 1 sheet frozen puff pastry, 10 inches square, thawed
- 3 ounces fresh goat cheese, crumbled
- 6 thick green asparagus spears, blanched and split in 4 lengthwise
- 2 ounces arugula salad, washed and dried
- 2 slices San Daniel or Parma prosciutto ham
- 1 tablespoon olive oil, extra virgin
- Salt and fresh ground pepper, to taste
Instructions
- Preheat the oven to 450°F/ 225°C.
- Cut the puff pastry sheet into 4 even-sized squares. Place them over parchment paper on a baking sheet.
- Sprinkle the goat cheese over each square, and cover with the ham broken into pieces. Layer the asparagus spears over the pastry squares.
- Bake until the pastry is golden brown and has risen. Serve warm from the oven with arugula over top. Drizzle with olive oil and seasoning.
