- 1 medium butternut squash, about 750 grams/26.5 ounces
- 12 slices smoked bacon
- 2 sprigs rosemary or thyme, leaves chopped
- 4 garlic cloves
- 1 tablespoon coriander seeds
Instructions
- Preheat oven to 320°F.
- Wash and dry the small butternut squash. Cut it in 4 and remove the seeds and fibers. Place them in an oven dish. Season with salt (lightly) and pepper from the mill. Wrap the pieces of squash with 3 slices of smoked bacon each. Add some rosemary or thyme sprigs on the dish, the unpeeled garlic cloves, and the crushed coriander seeds.
- Sprinkle with olive oil and cook for 1 hour or until tender.
