Wash and dry the small butternut squash. Cut it in 4 and remove the seeds and fibers. Place them in an oven dish. Season with salt (lightly) and pepper from the mill. Wrap the pieces of squash with 3 slices of smoked bacon each. Add some rosemary or thyme sprigs on the dish, the unpeeled garlic cloves, and the crushed coriander seeds.
