Balsamic Vinaigrette
A balsamic vinaigrette is delicious with a green salad but will be outstanding with ingredients like fresh tomatoes, sautéed scallops, boiled artichokes, and blanched asparagus. You can alter it with fresh herbs to your taste.
Servings: 4
Ingredients
YIELD 0.25 cup
- 1 tablespoon aged balsamic vinegar
- 0.5 teaspoon Dijon mustard
- 0.5 teaspoon garlic, finely chopped
- 2.5 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper, to taste
Instructions
- In a non-reactive mixing bowl, whisk in, one at the time, all the ingredients in listed order. It will produce a thicker vinaigrette dressing. One serving will equal two tablespoons of dressing.
- A quarter cup should easily be enough for about 3 to 4 servings of mixed green salad. Refrigerate and store in a covered container. Whisk well before serving.
