Balsamic Vinaigrette

A balsamic vinaigrette is delicious with a green salad but will be outstanding with ingredients like fresh tomatoes, sautéed scallops, boiled artichokes, and blanched asparagus. You can alter it with fresh herbs to your taste.

Ingredients

YIELD 0.25 cup

  • 1 tablespoon aged balsamic vinegar
  • 0.5 teaspoon Dijon mustard
  • 0.5 teaspoon garlic, finely chopped
  • 2.5 tablespoons extra-virgin olive oil
  • Salt and freshly ground pepper, to taste

Instructions

  • In a non-reactive mixing bowl, whisk in, one at the time, all the ingredients in listed order. It will produce a thicker vinaigrette dressing. One serving will equal two tablespoons of dressing. 
  • A quarter cup should easily be enough for about 3 to 4 servings of mixed green salad. Refrigerate and store in a covered container. Whisk well before serving.
