Tomato and Yellow Bell Pepper Bruschetta
These bruschettas have a taste of Italy with the combination of tomatoes and yellow bell pepper. They are both delicious and colorful.

Ingredients
- 4 slices crusted bread approximately 3/8 inch, 1 centimeter thick
- 1 clove garlic, peeled
- 2 tablespoons olive oil, extra-virgin
- Salt and freshly ground pepper, to taste
- 2 small ripped tomatoes
- 1 small yellow bell pepper
- 2 ounces Mozzarella grated
Instructions
- Preheat the grill of your oven.
- Toast the slices of bread in toaster to a light golden color (or in the oven if you don't have a toaster). Meanwhile, dice the tomatoes and the yellow bell pepper. Mix them in a bowl with salt and pepper.
- Rub the surface of the bread with the garlic and brush some olive oil. Distribute uniformly the tomato and bell pepper on the slices. Sprinkle the grated mozzarella cheese on the top. Put in the oven under the broiler until the cheese is fully melted.
- Keep an eye on the broiling bruschetta as they can quickly burn. Serve immediately.
