Ingredients

  • 2 tablespoons olive oil
  • 2 large garlic cloves, crushed
  • 2 tablespoons pine nuts
  • 2 pounds spinach, roughly chopped
  • 1/2 recipe pizza dough
  • 1/2 recipe pizzaioli sauce, about 1/2 cup
  • 1.5 cups mozzarella, chopped
  • 15 small black olives such as Ligurian
  • 3 tablespoons grated Parmesan
  • 0.5 tablespoon olive oil
  • Salt and pepper

Instructions

  • Preheat the oven to 475° F. 
  • Heat the oil in a frying pan and lightly fry the garlic and pine nuts over low heat until golden. Add the spinach, increase the heat and stir until wilted. Season with salt and pepper.
  • Place the circle of pizza dough on a baking sheet dusted with cornmeal and spoon the tomato sauce onto the dough, spreading it up to the rim. Sprinkle with half the mozzarella. Spread the spinach and olives over the top, followed by the rest of the mozzarella and Parmesan.
  • Bake 12 to 15 minutes, or until golden and puffed. Brush the rim with olive oil before serving.
