Ingredients

FOR THE KEBABS

  • 1.5 pounds boneless beef sirloin
  • 12 medium baby onions
  • 2 medium lemons, organic
  • 1 medium zucchini, green or yellow
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

FOR THE SALSA:

  • 0.5 medium red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon fresh mint, chopped
  • 0.5 medium cherry tomatoes
  • 0.5 medium mango
  • 0.5 medium lemon juice freshly squeezed
  • 3 tablespoons olive oil
  • 1 teaspoon freshly grated ginger
  • Salt and pepper, to taste

Instructions

  • Prepare the salsa: Dice the tomatoes, mango, and red onion. Place in a bowl. Add the minced coriander and mint, the grated ginger, the lemon juice, and olive oil. Season with salt and pepper. Mix well and reserve.
  • Prepare the kebabs: Cut the meat into 1 1/2 to 1 3/4-inch cube. Season with salt and pepper. Brush with olive oil.
  • Wash and pat dry the zucchini and cut it in chunks of about the same size of the meat. Cut the lemons in quarters and each quarter in half (depending on the size, quarters might be small enough). Peel the small onions. Thread the meat, onions, lemon and zucchini chunks onto the skewers.
  • Preheat your barbecue.  Place on the grill and cook for 5 minutes. Turn and cook again for 5 minutes. Serve the kebab with the salsa.

Notes

You can use regular tomatoes instead of the cherry tomatoes. I like to use cherry tomatoes because they are usually very red and sweet.

  3. Use Cherry or Regular Tomatoes: You can use regular tomatoes instead of cherry tomatoes for the salsa. Cherry tomatoes are a great choice because they tend to be very red and sweet, adding a bright, fresh flavor.
  4. Preheat the Grill: Make sure your grill is hot before placing the kebabs. This will help achieve a nice sear on the meat, locking in the juices.
  5. Use Fresh Herbs: Fresh cilantro and mint in the salsa bring a refreshing touch that complements the richness of the beef. Add them just before serving to maintain vibrant flavor.
  6. Check Doneness: Beef cooks quickly, so keep an eye on it. Medium-rare is ideal for kebabs; cook for about 10 minutes, turning once.
  7. Serve Immediately: Serve the kebabs hot with the salsa freshly prepared. This contrast of warm beef and cool, tangy salsa creates an amazing burst of flavors.
