Insalata Caprese - Salad Caprese
Insalata Caprese serves with no other dressing than a drizzle of extra virgin olive oil. However, if you are not confident that your tomatoes have the best flavor, a little balsamic vinegar will help them along. Remember to use only top quality ingredients!!

Ingredients
- 6 medium ripe plum tomatoes
- 3 to 4 mozzarella balls
- 2 tablespoons olive oil, extra virgin
- 15 medium basil leaves
- Salt and freshly ground pepper, to taste
Instructions
- Finely slice the tomatoes, pouring off any excess juice, and cut the mozzarella into slices of a similar thickness.
- Arrange alternating rows of tomato and mozzarella on a serving plate. Sprinkle with salt and pepper and drizzle olive oil over the top. Tear the basil leaves into pieces and scatter over the oil. Serve cold or at room temperature.
