- 1 clove garlic, peeled
- 2 tablespoons olive oil, extra-virgin
- Salt and freshly ground pepper, to taste
- 2 small ripped tomatoes
- 1 small yellow bell pepper
- 2 ounces Mozzarella grated
Instructions
- Preheat the grill of your oven.
- Toast the slices of bread in toaster to a light golden color (or in the oven if you don't have a toaster). Meanwhile, dice the tomatoes and the yellow bell pepper. Mix them in a bowl with salt and pepper.
- Rub the surface of the bread with the garlic and brush some olive oil. Distribute uniformly the tomato and bell pepper on the slices. Sprinkle the grated mozzarella cheese on the top. Put in the oven under the broiler until the cheese is fully melted.

Cooking Tips for Tomato and Yellow Bell Pepper Bruschetta Recipe
- Bread Choice: Use a sturdy, crusty bread like baguette or ciabatta for the best texture. You want the bread to hold up well under the toppings and maintain its crunch.
- Grill Carefully: When broiling, keep a close eye on the bruschettas. The cheese melts quickly, and the bread can burn if left unattended.
- Use Fresh Mozzarella: For a creamy, fresh taste, opt for fresh mozzarella instead of pre-shredded cheese. It melts beautifully and adds a soft texture to the bruschetta.
- Garlic Rub: For a subtle garlic flavor, rub the garlic on the bread while it’s still warm. If you want a more intense garlic taste, you can finely chop the garlic and add it directly to the tomato and bell pepper mixture.
- Customize the Toppings: You can add extra toppings like fresh basil, olives, or a drizzle of balsamic vinegar to enhance the flavors.
- Serve Immediately: Bruschetta is best served right after broiling while the bread is still warm and crispy. The longer it sits, the less crispy the bread will be.
