This delicious squash side dish is the perfect fall treat, sure to leave you warm and satisfied. The marriage of the crispy, smoky bacon and tender, slightly sweet squash will leave your guests clamoring for more.
Wash and dry the small butternut squash. Cut it in 4 and remove the seeds and fibers. Place them in an oven dish. Season with salt (lightly) and pepper from the mill. Wrap the pieces of squash with 3 slices of smoked bacon each. Add some rosemary or thyme sprigs on the dish, the unpeeled garlic cloves, and the crushed coriander seeds.
Sprinkle with olive oil and cook for 1 hour or until tender.
