Ingredients
2cupsfresh ripe mangoes,1/4-inch-diced
1 mediumtomato,peeled, seeded and diced
2cupsorange juice
1smalljalapeno pepper,seeded and minced
2clovesgarlic,minced
2tablespoonsolive oil,extra-virgin
1medium cucumber.peel, seedless and cut into 1/4-inch dice
1smallred bell pepper,seeded and cut into ¼ inch dice
1smallonion,cut into 1/4-inch dice
3tablespoonslime juice,freshly squeezed
2tablespoonsbasil or cilantro,chopped
Salt and freshly ground black pepper,to taste
Instructions
Process mangoes, tomato, orange juice, jalapeno, garlic, and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until its ready to serve.
