Ingredients
0.5poundscallops,finely chopped
2tablespoonslime juice,freshly squeezed
1tablespoonolive oil
2tablespoonscoconut,shredded
4tablespoonspineapple,finely diced
3tablespoonscoconut milk
1green onion,finely chopped
1tablespooncoriander leaves,finely chopped
0.5teaspoonred chili,seeded and finely chopped
Salt and freshly ground peppercorn,to taste
Instructions
Make the tartare: Finely dice the scallops and place into a bowl. Add the lime juice, shredded coconut, pineapple, coconut milk, chopped shallot, red chili (seeded and finely chopped), and salt and pepper. Mix well and reserve 5 minutes in the refrigerator.
Serve: Serve the fish in verrines decorated with extra coconut and pineapple.
