The word hummus comes from Arabic and means “chickpeas.” No wonder why chickpeas are indeed the main ingredient. Authentic hummus recipes include also lots of tahini and olive oil. Tahini is a sesame seed paste that can be replaced with a smaller amount of sesame oil and a drizzle of olive oil. Hummus is served as an appetizer with flatbread (such as pita).

0.5cupfat-free plain yogurt
14ounceschickpeas,drained and rinsed
2tablespoonslemon juice
1teaspoonsesame oil
1teaspoonground cumin
0.25teaspoonsalt
2pinchescayenne pepper,to taste

3pinchespaprika,to taste
Instructions
Line small sieve with cheesecloth; set over a bowl. Add yogurt; drain in the refrigerator until reduced by half, about 2 hours.
In a food processor, purée yogurt, chickpeas, garlic, lemon juice, sesame oil, cumin, salt, and cayenne pepper until smooth; scrape into the bowl. Drizzle oil over the top; sprinkle with paprika and serve with Pide or Pita.
