T for Temperature

Foodborne pathogens grow best in temperatures between 40 °F to 140 °F (4 °C to 60 °C), a range referred to as the Temperature Danger Zone. Temperatures below 4 °C and above 60 °C will slow or stop bacteria growth. Temperature control is one of the best ways to reduce the risk of foodborne illness caused by bacteria.
