Pizzaioli Tomato Sauce

Good pizza starts with good dough and good sauce, the Pizzaioli Tomato Sauce is never cooked, and like the rest of the ingredients, it cooks only in the oven.

Ingredients

Makes 1 cup or enough for 2 x 12" pizzas

  • 0.5 pound plum or Roma tomatoes
  • 8 large basil leaves
  • 4 cloves garlic, split in half and germ removed
  • 2 tablespoons tomato paste
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  • Core the tomatoes and cut them in medium size quarters. Place all the ingredients in the bowl of a food processor and puree them until well smooth. Stop the machine and using a rubber spatula clean the inside of the bowl and process briefly again. Taste and rectify the seasoning if necessary. Allow to rest at least 30 minutes to allow the flavors to blend.

Notes

In season use ripe vine tomatoes, the better the tomatoes the better the sauce and the pizzas. When not in tomato season, organic canned tomatoes work great too.
