Welcome to White Stocks Making

Making a white stock may look simple, but actually, there is an art to it. Given that white stock is the basis for so many dishes, from sauces to Consommé, Onion Soup and stews, it’s essential to understand the purpose of each ingredient and the properties each one brings to the stock.​ In this course, you will learn to master the stock making technique for fish stock, chicken stock, white beef stock, and Dashi stock.

Before starting learning about white stocks, make sure you take Stock Making 101, which is a prerequisite course.
