In many cuisines, soups are the backbone of the meal, healthy, tasty, and filling. In French cuisine, soups and potages are very important and require excellent cooking skills to make. This course is a foundation course, and you will learn the principles to make various types of thick soups, including puréed soups, cream soups, and veloutés. 

Soup making 101 is a prerequisite for all other soups courses that we offer. So before making clear soups, seafood soups, cold or international soups, make sure that you master and understand the principles.

The course includes cooking lessons and recipe assignments to practice what you have learned.

  • 3 cheat-sheets
  • 2 optional Quizzes – The quizzes are short and provide immediate feedback so that you have the chance to assess your performance and reflect on your mistakes.
  • Certificate of Completion – Once all the quizzes of the course have been submitted, a Certificate of Completion to the course is automatically generated, given that you scored at least 70% in each quiz.
